Pineapple Chicken Curry with Zucchini Noodles

Mr. G wont eat curry, some horrible childhood memory. So while Mr. G is away for the weekend, I took this opportunity to use the rest of the Zucchini from Friday and make another one of my delivery food favorites. AND omigod, I think I may have been Thai in a previous life because DAMN I can make some fucking good food.

  • 1 lb Chicken Thighs
  • 2 Zucchinis
  • 2 T of Coconut Oil
  • 1 can of Coconut Milk (can not carton people)
  • 1 Red Bell Pepper
  • 4 Celery Stalks
  • 1/2 Red Onion
  • 1 Jalapeno
  • 4 Cloves of Garlic, minced
  • 1 T of Ginger, minced
  • 3 T of Green Curry Paste (I used Thai Kitchen)
  • 1 cup of Pineapple, chopped
  • 1 T Fish Sauce
  • 1 T Chili Garlic Sauce
Okay, so heat your coconut oil in a pan and cook your chicken thighs. About 7-10 minutes a side. While your chicken is cooking get out your mandolin and julienne your zucchinis into little noodles. When your chicken is done cooking put it on a plate to rest.

In a bowl, mix your curry paste and coconut milk together. Pour into a pan and add your fish sauce and chili sauce, let this come to a boil. Then add all of your cut up veggies (the beauty of this recipe is you can chop your veggies as small of as large as you would like, no knife skills needed here)and garlic and ginger.

While your veggies are softening in the most wonderful sauce ever you can remove your chicken from the bone and cut it up into bite size pieces. Add to your pan of yumminess and cook for 10-15 minutes. Saute your zucchini noodles in the pan you cooked your chicken in until warmed.

Once your celery and peppers are softened you can throw in the chopped pineapple and stir. Plate and thank me later.

Umm, Can you say delicious? Bacon, two eggs with avocado and salsa, and tomatoes with basil? It was even worth cutting my finger for.
 Really, I just thought I would share my food porn of the morning. I am about to marinate some chicken and tonight I will share my recipe for Chicken Pineapple Curry with Zucchini Noodles. Its gonna be BOMB.

Titilating Paleo Pad Thai

So, After the most insane Vegas trip ever! (and a really bad reaction to eating grains, and beans, and cheese) I decided I needed to go Paleo full-time. No more beating around the bush, no more whoa is me I will eat a loaf of bread -Ok that last one never actually happened-....
So I have been craving Thai food for weeks. And am about to break because seriously there is like 10 Thai places that deliver in my neighborhood, and lets be honest, sitting on my ass watching TV while someone else cooks the whole family food is way way easier then actually cooking. And to be really honest, I am WAY TOO white to even try to make Thai food, right?
Well screw that, I made the best Pad Thai EVER (thanks to health-bent.com). It was pretty easy, 'cept for the spilling all of my coconut oil on the floor. What? Don't give me shit, I did it on purpose, it made the house smell like the tropics, or Banana Boat sunscreen, either way the floor smelled great.

Okay, okay, on to the recipe, you will need;
1 lb Chicken Thighs (or duck, or steak)
5-6 large peeled, cooked shrimp
1/4 cup of Coconut Oil (DONT SPILL IT)
2-5 Zucchinis
1 White Onion
4 cloves of garlic
1 T Apple Cider Vinegar
2 T fresh ginger, minced
3 T Almond Butter
1 T Chili Garlic Sauce
1 T Fish Sauce
1 Lime, juiced


Melt the coconut oil in a large pan over medium heat. While the coconut oil is melting, season your chicken thighs with salt and pepper. Add the chicken and cook on one side for 7-10 minutes, turn and cook 7-10 minutes on the other side. Remove your chicken and let it chill in on a plate. Keep the oil and the rendered chicken fat in the pan.
While your chicken is cooking use a mandolin to slice your zucchini into little noodles.

In the reserved oil, saute your onions, garlic and ginger until soft.
After your onions have turned opaque, add the chili sauce, vinegar, fish sauce, lime juice, and almond butter. Stir it UP.

While you are sauteing your onions heat your zucchini noodles in a separate pan until they are similar to al dente noodles.

Add all ingredients, including your chicken and thawed shrimp and heat for just a few minutes. plate and
serve HOT.
You could add more lime, crushed almonds, scallions or whatever suits your fancy.

So, I decided to start this blog as an experiment, no doubtfully in humiliation, but time will tell. I started my lil' Paleo experiment in June and have been quite the happy camper. I have realized I totally dig this sh*t, I mean I am totally, completely OBSESSED. I spend all of my free time searching for recipes to make and food to buy. Well, the boyfriend (we shall refer to him as Mr. G) and I have been experimenting in the kitchen for a couple months now and have really started to make some uber delicious meals. I decided that I would expand my experiment to the web and see if ya all can keep me on track. I will share my recipes and my totally embarrassing journey to get in the best shape of my life. Read it or don't, personally I dont give a (bleep), but check out some of the amazing things I have created in the kitchen and MAKE THEM. I am telling you, I may be a food genius.
